
The easiest and lightest way to prepare crepes which are also great for a vegan diet. I used them filled with spinach and ricotta and made some cannelloni to put in the oven, but they are also really good on their own. I will share with you just the basic recipe and you can have fun in experimenting with the different fillings and ways of servings.

What did I use
a large bowl, a whisk, a ladle, a spatula, a non-stick large pan, papertowels
Ingredients
250g plain flour
450ml dairy-free milk alternative (I used oat milk)
2 tbsp sunflower oil, plus extra to oil the pan
How did I do
I measured the flour into a bowl, poured in the oatmilk slowly, while whisking the batter. I added the oil and mixed until the batter was smooth and I let it sit for five minutes.
I put the frying pan over a medium-high heat, and oiled the surface using a little sunflower oil on a kitchen papertowel. When the pan was hot, I poured in the batter until and swirled it around so the batter spreads across the surface. I fried until well browned , then used the spatula to flip the crepe over and fry on the oder side
I placed the finished pancakes on a plate and repeat the process until the batter was used.
