
These pancakes are cute and healthy. Beets make them violet, and they are cute served with red fruits and red fruits’ yoghurt! A nice alternative for a peculiar breakfast.

What did I use
A blender, a cutting board, a knife, a large bowl, a whisk, a non-stick pan, a spatula, paper towel
Ingredients
2 small beets
200g / 1.5 cups plain flour (gluten free or regular)
1 tsp baking powder
2 eggs
2–3 tbsp honey
250ml / 1 cup milk
How did I do
I put in the blender the beet cut roughly in big pieces together with the milk, until smooth.
I whisked it with flour, honey, eggs, baking powder, and the mixture of beet and milk in the bowl.
I put a little oil/butter in the non-stick pan, when it was hot I lowered the fire and I dried it with the paper towel and I put a ladle of dough in it. When bubbles started to appear on the surface, I flipped it over with the spatula and I cooked for 1 minute more.
I continued this way making more pancakes, until the batter was finished.
I served them with some red fruits’ yoghurt, strawberries and a little maple syrup.
