Fast and easy vegan broccoli and bruxelles sprouts cream

A vegan super fast and healthy cream to serve as a starter or as a first course. Only 5 ingredients!

What did I use

a non-stick whisk, a blender, a non-stick pot, a cutting board a knife, a wooden spoon

Ingredients

a head of broccoli

100 gr bruxelles sprouts

4 cups of water

salt/pepper/minced garlic as required

half an onion

olive oil: 1 spoon

How did I do

I peeled and cut in pieces the onion.

I reheated the oil in the non-stick pot and I made a sautèed with garlic and onion, and I let it brown for about 5 minutes.

I cut the broccoli in pieces and added them at the onion with garlic. I cooked few minutes then I added the water.

I let it boil at middle fire for about 15 minutes.

I added salt and pepper and put everything in the blender for few minutes.

When I reached a creamy consistence, my soup was ready!

I served with some crostini made out of bread cut in cubes, oil, garlic and herbs and cooked at high temperature in the oven until brownish and crunchy. And, of course, some fresh oil on top.
