A healthy and tasty second dish, with the typical mediterranean flavors, olives, oregano and cherry or datterini tomatoes.

What did I use
a cutting board, pincers for the fishbones, a little bowl for the cherry tomatoes, a spoon
Ingredients
Salmon: 400 gr
Cherry tomatoes or datterini tomatoes: a handful
Oregano as required
Extra virgin olive oil as required
Salt to taste
Garlic: 1 slice
Black olives: a handful
Capers: 1 teaspoon
How did I do
I washed the tomatoes and I cut them in pieces. I mixed them with the garlic, peeled and cut in a half, and the oregano.
I added oil and salt and mix.
While the tomatoes were macerating, I prepared the salmon.
I took off eventual fishbones and peel. I cut it in two parts of the same dimension.
I took off the garlic from the tomatoes and I put 2/3 of them in the baking tray slightly oiled.
I put the salmon on the tomatoes and I covered with the remaining tomatoes. I added salt and pepper.
I put on it olives and capers and I cooked it at 180°C for about 15 minutes.
I served warm.
