Pan roasted mini focaccias

Sometimes it happens that I have the desire of focaccias but I do not have a lot of time for cooking. So I tried these mini focaccias with rosemary, super fast and super easy to cook in the pan: just perfect for a fanciful and simple side dish, a starter or a main course.

What did I use

a large non-stick pan with its lid, a large bowl

Ingredients

Flour: 135 gr

Extravirgin olive oil: 15 gr

Water: 60 gr

Salt: 1 teaspoon

Dry rosemary: 1 teaspoon

Baking powder for savory pies: half of 1 little bag

How did I do

I kneaded with the hands all the ingredients for about 10 minutes in the bowl.

I divided the dough in 6 parts and kneaded each of them again and then I flattened them with the hands.

I reheated the pan on low heat for few minutes, I put in it the focaccias and I covered with the lid.

I cooked for about 7 minutes, then I flipped them over and cooked for the same amount of time on the other side.

I usually let them cool for few minutes and I serve them alone as a side dish or filled as I want after cutting them in two. The ones you see in the pictures are with prosciutto crudo, feta cheese and black olives patée.
