Zucchini cheesy croquettes

 

These vegetarian croquettes are yummy, fast and so easy to prepare! They are perfect as a starter or for an aperitif with friends. Have fun serving them with different homemade sauces!

What did I use

a bowl, a large pan for frying, a cooking skimmer, sheets of towel paper, a spoon, a pot for the zucchini with its lid

Ingredients

Zucchini: 1, big

Egg: 1

Minced semi-soft cheese: 3 spoons

Flour: 5 spoons

Bread crumbs: 5 spoons

Salt/pepper to taste

Seeds oil as required

How did I do

I cleaned and cut into pieces the zucchini. I boiled it in the pot for about 10 minutes covered with the lid.

I dried the zucchini, let it cool for few minutes and mashed it roughly with a potato masher.

I mixed it well with egg, salt, pepper, cheese, bread and flour.

I reheated plenty of seeds oil in the pan. When it was hot, I took some mixture with the spoon and put it in the pan. I fried well few minutes per side and when it was brownish I took it with the cooking skimmer and put it on the towel paper to dry. I continued in that way until finished.

I served warm.
