Black rice salad with rocket salad, datterini tomatoes and shrimps lime flavour

I publish just now one of the best combination, even if simple, I tried this summer.A fresh and tasty rice salad for a light and flavorful lunch, an alternative meal with simplicity but creativity at the same time.

What did I use

two little pots, a cutting board, a knife, a lemon juicer, a grater

Ingredients

Black rice: 80 gr

Shrimps: 50/60 gr

Datterini tomatoes: 5/6

Lime, juice and peel if edible (otherwise lemon peel) as required

Rocket salad as required

Extravirgin olive oil as required

Ginger powder to taste

Minced parsley to taste

How did I do

I boiled the rice in salted water.

I washed and cut in thin slices the datterini tomatoes and boiled the shrimps for few minutes in lightly salted water.

I dried the rice and let it cool, I dressed with olive oil, juice and peel of lime, a teaspoon of minced parsley, the datterini tomatoes, the shrimps and the ginger powder.

I mixed well and let it stand in the fridge for about one hour before to serve.
