Muffins are one of my favourite type of sweets at all: with american origins, they’re super easy to prepare and one can do a lot of variations, most of them in less than an half an hour, so I use to prepare a lot of them… Citrus fruits muffins are not too heavy but anyway tasty; something that both who’s looking for something peculiar and who appreciates simplicity will love…

What did I use
a large glass bowl, a wooden spoon, 12 paper muffins moulds, two moulds for 6 muffins each, one little colander, an electric whisk
Ingredients
Ricotta: 250 gr
00 Flour: 250 gr
Eggs: 3
Orange extract: few drops
One lemon’s peel
Baking powder for cakes: 1 little bag
Icing sugar as required
How did I do
I turned on the oven at 180°C.
I beat the eggs with sugar until I had a compact, light and whipped dough.
I added ricotta, lemon’s peel, orange extract and flour and baking powder, possibly sifted.
I put the paper moulds in the moulds and filled them with the dough.
There’s quite a lot of baking powder so I never fill them too much or growing they will stick between each other.
I cooked for about 20 minutes.
I always control the cooking, it depends as well on the type of the oven, and to be sure that they are well cooked I usually try with a stick in the muffins, if when I take it off it is dry, they are ready.
When I served them, I covered them with icing sugar.
