Lactose-free Jam muffins

Muffins are those sweets which are perfect for every occasion, these ones are filled with jam, one of the simplest recipes , but the one that people never get tired of. They are thought to be eaten by people intolerant to lactose.

What did I use

two large glass bowls, a whisk, a small colander, muffins moulds,a baking tray


Flour: 200 gr

Starch 50 gr

Brown sugar 180 gr

Soy milk 250 ml

Seeds oil 90 ml

Egg 1

Vanilla extract few drops, or vanillin

Baking powder 8 gr

Jam as required (Or lactose-free hazelnut cream as required)

How did I do

I preheated the oven at 200°C.

I put in the bowl all the dry ingredients and mixed them well, than I pass ed them through the colander in the other bowl: in this way I avoid grains in the dough.

I added soy milk, oil and egg mixing with the whisk until the dough was smooth.

I put half of the dough in the muffins moulds, I added the jam/hazelnut cream in the center and I covered with the remaining dough.

I cooked for about 20 minutes. I served cold.
