Today I prepared these oven-baked vegan noodles and I have to say that I was quite satisfied by the result! This is a classic example of a comfort food recipe that one can adapt by changing vegetables, type of vegan cheese and sauce based on what one has in the fridge.

What did I use
a baking tray, a pot, a colander, a bowl, a spoon, a knife, a cutting board
Ingredients
Frozen broccoli: a dozen of tops
Vegan mozzarella: 2 spoons
Tomato sauce: 2 spoons
Seeds oil as required
Salt and pepper to taste
Rice noodles: 60 gr
How did I do
I boiled the rice spaghetti in boiling water for few minutes. I dried them and put them in the baling tray with the oil and mixed well.
In the same water I boiled the broccoli tops for about 10 minutes or until tender. I dried them and cut them in small pieces with the knife on the cutting board.
In the bowl I mixed tomato sauce with salt and pepper and I poured it on the noodles in the tray with one spoon of vegan mozzarella.
I mixed well and I sprinkled with the remaining mozzarella on the surface. I baked at 200°C for 20 minutes and I served warm.
