Creamy tasty vegan noodles with a mix of vegetables in a sweet and sour creamy sauce. Perfect for a tasty luch that doesn’t require much time or many ingredients.

What do you need

a wok, a spaghetti ladle, a little bowl, a whisk

Ingredients

Rice noodles: 100 gr

Wok vegetables mix, frozen: 150 gr

Peanut butter: a teaspoon

Ketchup: a spoon

Water or vegetable broth: a glass

Cornstarch: 1 teaspoon

Soy sauce: 2 spoons

Directions

Cook the frozen vegetables in the wok when the oil is hot. Add salt and black pepper. Add some water if required and cook at medium-slow fire. It will take about 10 minutes.

Boil the rice noodles in salted water for few minutes. Dry them and add them to the vegetables. Mix well at medium fire for one minute.

In the little bowl whisk together the soy sauce, the peanut butter, the ketchup, the cornstarch and the water or the vegetables broth. Pour in the wok and cook two minutes more at medium-slow heat mixing continuously.

Serve warm.
