Pan di spagna sandwiches

Looking for a different way of using pan di Spagna? Here it is: thin little discs to fill with whatever one likes, to make yummy sweet sandwiches. In this case I have chosen the classics: Nutella and jam… the basic recipe is free from milk and butter so if one fills it in the right way they are good for people intolerant to lactose as well.

What did I use

A baking tray, a sheet of oven paper, a wooden spoon, a large bowl, a glass, a butter knife

Ingredients

Eggs: 2

Flour: 60 gr

Sugar: 60 gr

Baking powder: a teaspoon

Vanilla extract: few drops

Jam and nutella as required

How did I do

I turned on the oven at 180°C.

I whipped eggs and sugar until I had a whipped, smoth and fluffy dough.

I added the sifted flour and baking powder and the vanilla extract.

I poured the dough on the baking tray with oven paper and I cooked for 10 minutes.

I cut some circles with a glass when they were still warm.

When they were cold, I filled them with nutella or jam and decorated with the two of them. I sprinkled then with icing sugar.
