Panzanella

A friend of mine from Tuscany came to visit me this summer and asked me if I wanted to prepare with him this very simple and super fresh (with simple and poor ingredients) typical traditional dish from where he comes from. I finally found the recipe he gave me that time and I wrote it here immediately.

What did I use

a cutting board, a knife for bread, a knife for vegetables, a medium-sized bowl and a big one

Ingredients

200 gr of old tuscan bread

half a Mozzarella

1 tomato or some cherry tomatoes

half a Cucumber

1/4 of a red onion

salt/pepper to taste

extra virgin olive oil as required

fresh basil to taste

How did I do

I cut the bread in little cubes and I put it in the bowl with a little water and some salt.

I cut the onion Julienne, the cucumber in thin slices, the cherry tomatoes in two and the mozzarella in big cubes.

I put the vegetables and the mozzarella in the big bowl, I roughly cut the basil with the hands and I dressed with oil, salt and pepper.

I took the bread, I squeezed it and I put it in the bowl with the other ingredients, I mixed well with the hands and I let it stand for 10 minutes before serving.
