I tried to buy for the first time vegan mozzarella because I like to experiment even though I’m not following this diet and I like to be able to prepare nice vegan dishes for friends who follow it. This is a simple way to use it for a fresh and light first course.

Ingredients
fresh rucola: 30 gr
short pasta: about 100 gr
vegan mozzarella: 30 gr
extra virgin olive oil: 30 gr
salt and pepper to taste
lemon juice as required
How did I do
I boiled plenty of salty water in the pot and in the meantime I prepared the dressing.
I mixed mozzarella, rucola, salt, pepper and lemon juice in the bowl.
I dried the pasta al dente, I mixed it well with the dressing and served with some more freshly ground pepper.
