This is a tasty vegetarian main dish that one can prepare in about 30 minutes, also in advance, for a dinner with friends. The bechamel can be seasoned as one likes the most (I chose a “pizzaiolo” taste) and one can substitute the peeled tomatoes with some tomato paste or sauce as well as with other well cooked vegetables.

Flour tortillas: 3
Milk: 2 glasses
Flour: 1 tablespoon
Minced Grana Padano: 1 tablespoon
Cheese in slices: 3 slices
Ground chili pepper, pepper, salt, oregano to taste
Olive oil: 1 tablespoon
Peeled tomatoes: 1 can
How did I do
I cut every tortilla in 4 parts and I heated the oven at 200 °C.
I prepared the bechamel: I let the milk boil in the non-stick pot, I added the flour and I whisked not to form plums. I added the chili pepper, the oregano, basil and parsley. I cooked for few minutes at medium-low fire. When it became dense, I turned off the fire and added oil.
I put a tablespoon of bechamel on the bottom of the baking tray, I put a layer of tortilla, one of tomatoes, one of bechamel and a slice of cheese, roughly minced. I continued this way for three times and I sprinkled with the Grana Padano on the surface.
I baked for about 15 minutes, cut in slices and served hot.
This is one of those dishes that are better prepared the day before and reheated the day after, because it has time to become compact and to absorb better the tastes.
