Peanut butter beans

I love when “creamy”, “healthy” and “vegan” go together! In this recipe, they perfectly combine in a super nutrituous and yummy beans bowl, perfect to serve with crunchy toasted bread or some greek Pita bread.

What did I use

a nonstick pot, a spoon, a little bowl, a nonstick spoon, a cutting board, a knife

Ingredients

Beans in tomato sauce: 1 can

Ground garlic: to taste

Onion: 1/4

Water: 2 spoons

Olive oil: 1 spoon

Peanut butter: 2 spoons

Cumin: 1 teaspoon

Salt/pepper: to taste

Lemon juice: 1 spoon

How did I do

I made a sautéed with the onion peeled and chopped in little pieces, the ground garlic and the hot oil in the nonstick pan. I cooked for a pair of minutes, until the onion was brownish.

I added beans with their sauce, mixed well and cooked at low heat for about 10 minutes.

In the bowl I mixed the peanut butter with the lemon juice and the cumin until creamy.

I added the peanut butter to the beans, put salt and pepper and cooked for 5 minutes more.

I served immediately with some hot Pita bread and fresh vegetables.
