Peppers filled with noodles

One of my favourite dishes at all is filled peppers because they are versatile and always tasty and nice to see, filled with meat, with pasta, with rice or with cheese… In this vegetarian version I filled them with noodles and dressed them with some cheese and almond fleaks. As always, easy, fast, cheap and yummy. A variant I tried in another occasion, even faster because of the cooking times, was the one with tomatoes instead of peppers.

What did I use

a cutting board, a knife, a spoon, a little bowl, a baking tray, a sheet of oven paper

Ingredients

Red peppers: 2

Noodles vegetables flavour, already cooked: 1 portion

Almond fleaks as required

Light spreadable cheese: 1 tablespoon

Olive oil: 4 spoons

Salt/pepper/oregano as required

How did I do

I preheated the oven at 200°C.

I cut the upper part of the peppers and emptied them. I washed them and took off all the seeds. I cooked them in the oven for 10 minutes.

In the bowl,I melted the cheese in a little cooking water of the noodles. I mixed it together with the noodles. I filled the peppers with the noodles. I put them in the baking tray covered with baking paper.

In the bowl, I mixed oil with salt, pepper and oregano.

I put on the filled peppers the almond fleaks and put on them the flavoured oil with the silicon brush.

I cooked in the oven for about 20 minutes more.

I served warm or lukewarm.

    io per farli stare in piedi ne uso più di uno in una teglia piccola così si sostengono a vicenda! :p sono contenta che le siano piaciuti egregio Moreno! Io non avevo la passata e per quello ho usato il concentrato, direi che sono intercambiabili nel momento in cui ne aggiusti un minimo la consistenza aggiungendo o meno l’acqua!
