Cantonese rice

One of the classic of oriental cuisine is this colorful dish made with rice, peas, ham and eggs. This is how I prepare it.

What did I use

a wok, a wooden spoon, a large glass bowl, a rag, a small glass bowl

Ingredients

Basmati rice : 250 gr

Ham: 3 thick slices

Little peas: a can, 200 / 300 gr

Eggs: 3

Soy sauce

Seeds oil

Minced shallot: 1

How did I do

I boiled plenty of water and I cooked the rice.

I dried it and let it cool in a glass bowl, covered with a rag.

In the meanwhile, I cut the ham in little cubes and dried the peas.

I prepared then the little omelette: I beat the eggs with some soy sauce and cooked for few minutes for side with hot oil.

I put it in a plate and I cut it in little pieces.

In the wok, I made a sautèed with the shallot in hot oil and I added peas and ham. I cooked for one minute at medium-high fire and I added eggs and rice.

I put 3/4 spoons of soy sauce, continuing to cook for few minutes more.

I served warm.

This dish is really good when reheated the day after in the microwave, but even better in a pan.
