Best no-waste recipe when one has to use some heavy cream that is about to expire. It is versatile, yummy, easy; semifreddo is one of the most typical italian desserts. This time I used frozen berries.

What did I use
an electric whisk, a spoon, a non-stick pan, a wooden spoon, ceramic moulds, some plastic wraps
Ingredients
300 gr of mixed frozen berries (I used strawberries)
3 spoons of sugar
250 gr of whipped cream mixed together with 50 gr of homemade cherries jam
How did I do
I cooked at low heat for about 10 minutes the berries with the sugar, mixing often. I let it cool before using it.
I mixed slowly the whipped cream with the jam and the berries, not to ruin the compactness of the whipped cream.
I put the plastic wrap on the inside of the moulds and poured the mixture until the edge, flattening the surface.
I put in the freezer for few hours.
I put the semifreddos in the fridge 10 minutes before serving, taking them out the moulds and removing the plastic wrap, or cutting it in slices if I used the single plumcake mould, and served with some homemade cherries jam and fresh fruit.
