Oregano chicken bites with olives and red onion

I had to prepare a tasty dish without lactose and without gluten with chicken breast, having very few ingredients at friends’ house who, let’s say, didn’t go shop in a while… as always, I looked fastly in the fridge and in the pantry and I invented something with what I saw. The rusult was this secound course with flavours that go very well together, as always super fast, super easy and also super cheap.

What did I use

a non-stick pot, a cutting board, a knife, a wooden spoon, a grilled

Ingredients

chicken breast: 4/5

green olives: about 20

red onion: 1

slices of bread: 2 (you can use gluten free bread for the gluten free version)

Minced oregano as required

salt as required

light beer: half a glass

Extra virgin olive oil: 1 spoon

How did I do

I reheated the oil in the pot with the onion (cleaned and cut in little cubes). In the meanwhile I cut the chicken in little rags and I put them to reheat on the grill.

I added the chicken to the onions when they started to brown.

I cooked few minutes than I added the beer.

I grilled the slices of bread both sides and I put on them oregano as required.

I added olives and cooked everything for few minutes more.

I served warm and put other oregano on t.
