
To create the recipe of these mini cakes I used a basic one of a cake Ricotta and orange based, substituting the rice flour to the other one and putting the dough in few little silicon moulds instead of a classic big one. I decorated them with 2 little pieces of orange, but they are really good with dark chocolate or whipped cream as well.

What did I use
a wooden spoon, a large glass bowl, few little silicon moulds for cakes, a grater, an orange juicer
Ingredients
Rice flour: 120 gr
Ricotta: 200 gr
Sugar: 200 gr
Yolks: 2
Orange (peel and juice): 1
Vanillin: a pinch
Baking powder: about 10 gr
Icing sugar as required
How did I do
I turned on the oven at 160°C.
I kneaded sugar with ricotta.
I added yolks , orange peel and juice, vanillin, flour and baking powder, mixing well every time I added an ingredient.
I put the dough in the silicon moulds slightly wet and baked in the oven for about 20 minutes (I always control the cooking with the stick).
I served cold, sprinkled with icing sugar and decorated with some fresh orange.
