This recipe was supposed to be used for a cake and had Nutella as a filling in the center as well. I didn’t have a lot of time so I decided to change it as you see it now, so I was able to obtain a result equally yummy but in less time.
Time of cooking
30 minutes
Servings
20 mini cakes
What did I use
A large bowl, a wooden spoon, a butter knife, silicon moulds, an electric whisk
Ingredients
0 Flour: 240 gr
Coconut flour: 100 gr
Sugar: 160 gr
Eggs: 4
Yoghurt (coconut or banana or white): 250 gr
Seeds oil: 100 gr
Baking powder: 16 gr
Vanilla extract: few drops
Salt: a pinch
How did I do
I whipped eggs and sugar until they were white and soft.
I added the other ingredients little by little, continuously whipping: yoghurt, vanilla extract, seeds oil, baking powder, flour and coconut flour.
I put the dough in every silicon mould and baked in the oven for about 20 minutes or until cooked (I always control the cooking with a wooden stick!)
I took them off the oven and immediately spread on each of them some Nutella and sprinkled with cononut flour.
I served cold.
Buon appetito!
