Tzatziki potato salad

 

I had three boiled new potatoes left and I had more or less everything to prepare the tzatziki sauce, so I decided to put them together to create a fresh summer main course.

What did I use

A blender, a cutting board, a knife, a large bowl

Ingredients

Boiled new potatoes: 3 (you can both keep or take off the peel, I always keep it in new potatoes)

Greek yoghurt or Skyr, plain: 250 gr

Minced parsley: 1 spoon

Olive oil: 1 spoon + as required

Salt/pepper to taste

Bread, grilled: few slices

Fresh mushrooms to taste

Garlic to taste

Cucumber: 1 little or half big

How did I do

I peeled the cucumber, removed the seeds and cut it into cubes. I put some big salt on them and let them dry for few minutes. I washed them, dried them with the paper towel and mixed them with garlic and olive oil. I let them stand for about 10 minutes.

I put them in the blender with a spoon of Greek yoghurt and grinded for few minutes. I added the rest of the yoghurt and the parsley and let it stand in the fridge for a little while. Finally, I added the potatoes cut in cubes.

I served with the mushrooms, the bread, some fresh olive oil and salt and pepper to taste.
