Farrotto with burrata and dried tomatoes in balsamic vinegar

This farrotto is super fast to prepare, tasty and stringy: it is still quite cold here in Italy in the evenings and one eats with pleasure this kind of meals. Vegetarian with taste and few ingredients.

What did I use

a non-stick pan, a wok, a wooden spoon, a ladle, a cutting board

Ingredients

3 cans of cooked spelt (150 gr each)

1 red onion

1 slice of garlic

1 burrata

1 spoon of spreadable cheese, not to0 tasty, it is only used in this case to make the farrotto creamy without covering the taste of the burrata

2 spoons of balsamic vinegar

Vegetables broth as required

How did I do

I peeled and cut the extremities of the onion, then I cut it in thin slices. I cut off the extremities of the slice of garlic and peeled it also, then I cut it in two parts.

I reheated the oil in the pan at medium heat and I made a sautèed with garlic and onion in two minutes, mixing often. I poured in the balsamic vinegar.

I lowered the fire and I continued the cooking adding a little water when necessary until the onion were well cooked.

I took off the garlic from the pan, highered the fire and added the spelt and the dried tomatoes.

I cooked for five minutes with a little broth, I added the spreadable cheese and I mixed until melted.

I turned off the fire and I added the burrata cut in pieces.

I served immediately.
