Keto, gluten-free and lactose-free coconut pancakes

Fluffy, easy and healthy pancakes with few ingredients that well fits both a keto and a lactose-free diet. I topped with peanut butter, blueberries, apple, maple syrup and dark vegan chocolate for my packed-with-energy breakfast.

What did I use

two large bowls, a whisk, an electric whisk, a ladle, paper towels, a large non-stick pan, a spatula

Ingredients

4 eggs

90 gr vegan butter

4 tablespoons coconut flour

2 tablespoons coconut milk

1 tablespoon baking powder

1 tablespoon maple syrup

1 teaspoon cinnamon

How did I do

I melted the butter in the microwave and I whisked it with the egg yolks, the coconut flour, the milk, the baking powder , the maple syrup and the cinnamon.

I whipped the eggwhites and I fold them into the mixture.

I heated some more butter in the non stick pan at medium fire and I took off the exceeding with the paper towel. I poured some mixture and I waited until bubbles started to form on the top of it. Then I flipped my pancakes and I finished cooking the dough this way. I obtained 6 pancakes.

I dressed and serve lukewarm.
