Chicken cubes and red onion with orange

Chicken breast is always quite easy and fast to cook (it is healthy as well) and it is for this reason that I cook it often. In this case I wanted to prepare one of those dishes that “don’t need a knife but just a fork”, at a friend’s house who didn’t have a lot of ingredients… One of these classic recipes thought at the moment with what you have in the fridge, without shopping. The result are chicken bites that are super soft, without using flour, in a light dish good for people on diet as well…I liked it, and I want to share it with you. Let me know what do you think when you try it!

What do you need

a little non-stick pot, a cutting board, a knife, a wooden spoon, an orange squeezer

Ingredients

Chicken breast: 4 slices

Orange: 1

red onion: 1

salt as required

mixed salad as required

Olive oil as required

Directions

Cut the orange in two and squeeze it, remembering to keep few slices for the final decoration of the dish.

Clean and cut the onion in cubes.

Reheat the oil in the pot with the onion and in the meanwhile cut the chicken breast in little cubes as well.

Add the chicken to the onion and cook it for few minutes.

Add orange juice and salt.

Continue the cooking for 2/3 minutes more.

The cooking is fast because if you keep the meat on the fire for too long it will dry !

Serve the cubes of chicken and onion and decorate with salad and orange.
