This is a recipe I use when I have to recover some boiled rice without sauce. It is very light and good for people on diet because I add to the rice only some oil, vegetables and a few ham (that I buy usually low-fat). Surely one won’t have the compactness of the common filling with butter and parmesan, but if one wants to go light this is for sure the right recipe.

a cutting board, a knife, a middle-size bowl, a spoon, a baking tray
Ingredients
Boiled rice: 2 glasses
Peppers: 4
Cherry tomatoes: 6
Low-fat ham: 50 gr
Olive oil: 2 spoons
Parsley/basil as required
Minced garlic as required
Salt: a pinch
How did I do
I reheated the oven at 200°C.
I washed the vegetables.
I cut the upper part of the peppers and cleaned them from their seeds.
In the bowl I mixed well rice, the cherry tomatoes cut in little cubes, basil, parsley, garlic, salt and oil.
I filled the peppers with it and put them in the oiled baking tray.
I put some oil on their surface as well and baked in the oven for about 25 minutes.
I served hot.
