Jam cookies with rice flour

A tasty recipe with few ingredients and fast to realize, a cuddle for who is going to taste it! These cookies are soft and lighter than the cookies using only 00 flour.

What did I use

A bowl, sheets of oven paper, a pastry board, biscuits moulds or glasses, a baking tray

Ingredients

100 gr rice flour

75 gr 00 flour

1 egg

70 gr sugar

70 gr butter

a little bag of vanillin

5 gr of baking powder (about a teaspoon)

minced lemon peel

filling: jam or chocolate/hazelnut cream gluten-free

How did I do

In the bowl, I kneaded the softened butter with sugar and vanillin until butter and sugar were well amalgamated in a whipped dough.

I added egg and mixed well all together.

I added lemon peel little by little, the sifted flours and baking powder.

I kneaded fastly until the dough started to detache from the borders of the bowl and to form a “ball”.

I put in the wrap and put it in the fridge for at least half an hour.

I stretched out the dough with the rolling pin, tall about 5 mm and used the moulds or glasses for the cutting.

I put them on a baking tray covered with baking paper and baked in the oven at 180°C for 10-15 minutes, until they were brown on the surface.

I closed them two by two with two different kind of jams.
