Oven baked rocket salad and quinoa omelette

A tasty, light and fanciful second dish to prepare fastly for a healthy and nutritious dinner!

What did I use

a little pot, a non-stick pot, a wooden spoon, a spoon, a fork, a baking tray, a sheet of baking paper

Ingredients

Quinoa: 50 gr

Rocket salad: 50 gr

Egg: 1

Salt to taste

Minced Grana padano: 1 spoon

Garlic: 1 slice

Olive oil, extravirgin: 1 spoon

Minced parsley as required

Cumin, minced to taste

How did I do

I boiled the quinoa in salted water for about 10/15 minutes.

In the non-stick pan, I cooked for few minutes the rocket salad with the slice of garlic mashed or cut in two pieces in the reheated oil. I took off the garlic.

I reheated the oven at 200°C.

I beat the egg with the fork, the cheese, the parsley and the cumin,

I mixed it with the rocket salad and the quinoa and I poured in the baking tray covered with baking paper.

I cooked in the oven for about 10/15 minutes.

I served warm with some fresh rocket salad and some balsamic vinegar glace.
