
Tortillas are a very versatile dish and super easy to prepare, especially if one uses ready tortillas. I prefer to do the dough on my own, but sometimes is comfortable just to have fun thinking about different fast fillings when one doesn’t have a lot of time.Here there is a vegan filling I tried today for lunch. Tasty and creamy! I reheated then in the oven to have the tortillas a little crunchy.

What did I use
a little non-stick pot, a wooden spoon, a cutting board, a knife, a teaspoon, a sheet of baking paper, a baking tray
Ingredients
Tortillas: 1
White onion: 1/4
Sugar: 1 teaspoon
Frozen vegan mince (rehydrated textured soy proteins): 130 gr
Jalapenos,pickled : few slices
Cucumber: few slices, cut in little pieces
Carrots: few slices, cut in little pieces
Tomato: 1
Apples vinegar: 1 spoon
Soy sauce: 1 spoon
Mustard, sweet: 1 spoon
Ketchup: 1 spoon
Olive oil as required
How did I do
I reheated the oven at 190°C in grill modality.
I cooked at slow fire the vegan mince with tomatoes and onion cut in pieces, the soy sauce, sugar, vinegar and ketchup for about 15 minutes.
I covered the baking tray with the baking paper, oil it a little and put on it the tortilla. I covered it with the mince and the jalapenos.
I cooked in the oven for 5 minutes, dressed with cucumber and carrots and with the mustard melted in the pot where I cooked the mince, and I served immediatly.
