This is a very simple bread when one doesn’t have a lot of time but still wants his/her homemade bread. It is rustic and tasty because of the use of these type of flours.

What did I use
two moulds for plum cakes in aluminium, a large bowl, a spoon, a little pot, a wooden spoon
Ingredients
400 gr of whole wheat flour
50 gr of type 2 flour
150 + 275 ml of water
1 tablespoon of brown sugar + 2 tablespoon of water for the syrup
7 gr of dry beer yeast
Salt to taste
How did I do
I mixed flours and salt.
I put the sugar and the water in the little pot and I let the sugar melt completely before to run off the fire and to add 150 ml of water and the yeast. I mixed and let it stand for 10 minutes.
I poured the mixture on the flours and I added the remaining water, mixing until smooth. I let it stand for at least 20 minutes.
I poured the dough, divided in two parts, in the moulds and I baked at 230 °C in the upper part of the oven for 20 minutes, then I lowered the heat at 180°C and I baked in the lower part of the oven for 15 minutes more.
I took off the bread from the moulds and I put it upside-down. I finished the cooking in about 10 minutes.
I let it cool a little and served lukewarm or cold.
