Sauces give that “something more” to both sweet and savory recipes and they change completely the final taste of a dish, giving completeness to it. This is a very intense and simple sauce perfect for roasted flavors.

Ingredients
Tomato jam: 200 g (homemade with 500 gr of tomatoes, trimmed and cut into pieces and cooked with 125 gr of sugar and the juice of half a lemon for about one hour, then put in a glass vase well closed with its lid and put upsidedown to cool to vacuum-seal it)
Brown sugar: 50 g
Honey: 50 g
Glucose syrup: 1 teaspoon
Lemon juice: 25 g
Worcestershire sauce: 25 g
Paprika: a pinch
How did I do
I put all the ingredients except the honey in the pan, I mixed well and I let them cook at slow fire for about 15 minutes.
I added the honey and I continued to cook the sauce for 10 minutes more.
The batter started at this point to become dense: I turned off the fire and added the glucose syrup and the paprika.
I let the sauce cool at room temperature first, then in the fridge, and I served it with roast chicken and potatoes.
