Almond biscuits (Cantucci)

My sister sent me this recipe of the famous Tuscan buiscuits after trying different recipes, describing it as the best one.

What did I use

A baking tray, a sheet of oven paper, a knife, a bowl, a spoon

Ingredients

Flour: 125 gr

Sugar: 100 gr

Almonds (possibly with peel): 65 gr

Egg: 1

Minced peel of half a lemon

Baking powder: half a teaspoon

Vanilla extract: few drops

Salt as required

How did I do

I reheated the oven at 180°C.

The procedure is the same of the pasta frolla:  

I mixed flour, sugar, baking powder and lemon peel. I made a hole in the centre and added the beated egg with salt and vanilla extract.

I kneaded with hands.

I added the almonds.

I mixed them at the dough and I created 1 cylinder 5 cm tall and 5 cm large and I put it on the baking tray with the sheet of oven paper.

I cooked for 25 minutes.

I cut the cylinders immediatly diagonally in 1 cm large slices.

I changed the temperature of the oven to 100 °C.

I put the almond biscuits on the baking tray and cooked for 20/25 minutes more.

I served cold. In Italy we eat them drinking Vin Santo.
