Spanish – Italian Pasta

I was at a friend’s home who just came back from Spain bringing with him spanish ham and high quality olive oil. Since my parents sent me some Grana Padano from Italy, good pasta and saffron and a friend of mine sent me long pepper we decided to unite our ingredients to create this mediterranean dish during the long cold icelandic winter!

What did we use

a non-stick pot(large), a pot, a colander, a cutting board, a knife

Ingredients

Big zucchini: 1

Grana Padano: few fleaks

Long pepper: 2

Jamon: few slices

Saffron: 1 little bag

Penne rigate: about 200 gr

Olive oil as required

Big salt as required

Water as required

How did we do

We boiled the water with salt in the pot.

In the meanwhile we washed and cut in pieces the zucchini and fried them in the hot oil.

When the water boiled, we cooked the pasta following the directions.

I cut the slices of ham in little and thin pieces and melted the saffron in a little cooking water from the pot.

I dried the pasta keeping some cooking water and cooked it at high fire for few minutes with the zucchini, the saffron, ham and a little more of hot oil.

I served decorating with the Grana Padano fleaks and the long pepper minced roughly at the moment.
