Pan brioche mini pizzas are soft and sweet, perfect for a buffet or an aperitif or for the birthday party of children. I left tem without cheese or I put just some mozzarella on on some, and I put some tuna and capers on others, but one can have fun with a lot of different variations.

a baking tray, a knife, baking paper, a large bowl, a pastry board, plastic wrap
Ingredients
Flour 00: 500 g
Extra virgin olive oil: 50 g
Milk: 100 g
Egg: 1
Water: 100/120 g
1 little bag of dry yeast
White sugar: 20 g
Salt: 15 g
How did I do
I melted the yeast in the lukewarm milk.
In the bowl, I poured flour, oil, egg, milk and yeast, sugar and I mixed.
I added salt and water little by little and kneaded until I had an elastic and soft dough.
I covered with plastic wrap (without touching the dough) and I let it grow one hour and a half.
When this time has passed, I took again the dough, I put it on the pastry board and without kneading it too much I divided it in stripes and from these I obtained about 20 little balls.
I put them on a slightly oiled sheet of oven paper in the baking tray and I pressed them a little with the fingertips.
I reheated the oven at 180 °C and while it was getting warm I let the mini pizzas grow a little more.
I dressed some of them with some tomato sauce and others with tomato sauce, tuna and capers.
I put in the oven for about 15/20 minutes.
I served them hot, but they were good also lukewarm or cold.
