A different way to serve rice or to use some leftover boiled rice. One can put on the top of the base whatever he/she likes the most, changing every time depending on what he/she feels like eating or what one has in the fridge! Let’s start this fresh and tasty version with fresh mushrooms and grana padano.

What did I use
A baking tray for cakes, a sheet of oven paper, a large bowl, a little bowl, a spoon, a cutting board, a knife, a pot, a colander
Ingredients
Rice basmati: 300 gr
Butter: 30 gr
Grana padano, minced: 50 gr + few fleaks
Egg: 1
Milk: 100 gr
Tomato sauce: few spoons
Mushrooms: about 20 slices
Olive oil: 2 spoons
Salt/ pepper to taste
Ground cumin to taste
Lemon juice: 1 spoon
How did I do
I boiled the rice in the milk and some savory water until cooked. I dried it and mixed it in the bowl with the butter, the egg and the minced Grana padano.
I put it in the baking tray covered with baking paper and pressed it well. I spreaded with tomato sauce and cooked in the oven at 180°C for about 20 minutes.
I cut in slices, put on a serving plate and covered with the slices of mushrooms and the fleaks of Grana padano.
In the little bowl I mixed oil, lemon juice, salt, pepper and cumin and I poured on the cake before serving.
