Strawberries and skyr wacky muffins

Wacky muffins perfect for breakfast or to serve with the afternoon tea without fat in the dough.

What did I use

a large bowl, a whisk, a wooden spoon, a sheet of oven paper (not necessary)


a cake mould 22 cm large or a plumcake mould


300 gr flour

300 gr Skyr

150 gr sugar

2 eggs

1 little bag of baking powder

200 gr of mixed berries, frozen or fresh

icing sugar as required

butter and flour as required for the mould (not necessary)

How did I do

I beat the eggs with the sugar with the whisk in the bowl. I added Skyr and mixed well.

I added slowly the flour and the baking powder possibly sifted together.

I put the baking paper or the butter and the flour in the mould and poured half of the dough.

I put the berries and covered with the other half of the dough.

I put in the oven at 180°C for about 40 minutes.

I let it cool completely, sprinkled with icing sugar and served.
