A wacky and tasty vegan apple cake, with a lot of fruit, no fats, a little flour and sugar and few more ingredients.

Ingredients
1.5 cups all-purpose flour
3/4 cup sugar
3/4 teaspoon baking soda
1 teaspoon ground cinnamon + serving
1/4 teaspoon salt
1 mashed banana
1/4 cup water
2 teaspoons vanilla extract
1 tablespoon apple cider vinegar
3 apples, peeled and thinly sliced
Powdered sugar for serving
How did I do
I preheated the oven to 350°F. I covered with the baking paper the round pan.
In the large bowl, I whisked flour, sugar, baking soda, cinnamon, and salt.
In the other bowl, I whisked the mashed banana with water, vanilla, and vinegar.
I poured wet ingredients into the dry ingredients and mixed with a large spoon until just combined. Batter was very thick, but the apples would release moisture as they bake.
I arranged some of the apples in a circular pattern to cover most of the bottom of the prepared cake pan. Then gently I folded in the remaining apples into the batter.
I spooned the batter into the pan and I baked for circa 45 minutes, or until the center is set and the cake is lightly browned on top. I rotated the cake halfway through baking time. Once cooled, run a knife around the edges to loosen the cake, and gently unmold so that the apple design was on top.
I dust with powdered sugar and cinnamon and served.
