Finnish summer fish soup

When I went to Finland for holidays with the family few yeras ago I seized the chance to learn few recipes. This is the typical summer finnish soup that one finds in every restaurant, usually salmon based. It’s fun also to combine different types of fish.

What did I use

a cutting board, a knife, a potato peeler, a large pot

Ingredients

half an onion

few potatoes

few carrots

a piece of rainbow  trout or salmon, middle dimensions

a piece of white fish, small dimensions

fish broth or water

fresh cream

a little dill or timian

salt/pepper as required

butter (I used olive oil, italian habit…)

How did I do

I browned the onion, cut in thin slices with oil. I put in the broth and I let it boil.

I added potatoes and carrots,washed and cut in little cubes. From the moment it boiled again, I cooked for about 10 minutes at low fire.

I added the fish, cleaned and cut in cubes, and the cream, and continued the cooking for other 5 minutes.

When it boiled again, I turned off the fire and I let it stand covered with a lid for about 10 minutes.

I served warm with the dill or timian.
