Lately, I am trying to limit the calories in my creations because it always ends like me eating too much because of my gluttony! I already prepared an eggless version of the classic pancakes but this one time I wanted to do even more: vegan, light, good and soft. Not impossible nor difficolt at all, these pancakes are low in calories and they’re really good.

What did I use
a bowl, a spoon, a whisk
Ingredients
150 gr of 00 flour
50 gr of sugar
200 gr of water
2 teaspoons of olive oil
1 pinch of salt
1 teaspoon (whole) of baking powder
How did I do
In the bowl I mixed with the spoon flour, baking powder, sugar and salt. I added then water and oil little by little, always mixing with the whisk.
I reheated then the non-stick pan slightly oiled and then dried with the paper towel, then I poured a spoon of batter for every pancake. When little bubbles appeared and the borders started to dry, I flipped them over. When it was cooked, it was easy to take it off the pan.
I prepared all the light mini pancakes this way. I usually serve them with some fruit, seeds , melted chocolate or marmelade and jam of any kind.
