It’s since a few that for a physical problem I have to follow a lactose-free diet combined with the use of less sugar and no white flours… I find myself to eat things with low fat and sometimes not very tasty but I don’t give up and I try anyway recipes that can satisfy my gluttony and my never ending desire of sweets! This recipe surprised me with its simple and yummy taste even if the ingredients are few and poor.

What did I use
muffins aluminium moulds, a whisk, a wooden spoon, a large bowl, a cutting board, a knife
Ingredients
Whole spelt flour: 300 gr
Eggs: 2
White eggs: 4
Brown whole sugar: 150 gr
Apples: 3
Soy white yoghurt: 125 gr
Olive oil: 60 gr
Baking powder: 16 gr
Vanilla extract: few drops
How did I do
I reheated the oven at 170°C.
I whipped eggs and eggs white with the sugar.
I added yoghurt and continued tho whip.
I added flour, baking powder and vanilla extract.
I peeled and cut apples in little pieces and added them to the dough.
I poured it in the moulds.
I cooked in the oven for 20 minutes (using a wooden stick to control the cooking!)
I served lukewarm or cold.
