I love burritos! Mexican food is so comfort and satisfying, and filling, and, last but not least, fun to prepare. This is a classic recipe for burritos, to change based on the desires of the moment.

What do you need
a non-stick pan, a wooden spoon, a blender, a knife, a cutting board, a pot, a spoon
Ingredients
1 Can of beans
half an onion
ground chili pepper to taste
cumin to taste
half a can of maiscorn
1 big tomato
coriander to taste
salt, pepper
4 tablespoons of tomato sauce (I used homemade tomato sauce)
1 tablespoon of sunflower oil
1 slice of garlic
Vegetables broth or water as required
plain white yoghurt to taste + 1 tablespoon
half a teaspoon of dijon mustard
green salad to taste
How did I do
I heated the oil in the pan at medium fire.
I minced the onion, peeled the garlic and fried them with the chili pepper in the pan for a pair of minutes, mixing often. I added the cumin and continued to cook at slow fire.
In the meanwhile I dried the beans and I mashed them with the fork. I put them in the pan with onion and garlic. I added the maiscorn together with the tomato sauce and some water and I cooked for other 10 minutes.
I added the coriander and mixed.
I heated the tortillas, I put in the middle of each of them few leaves of salad and the beans, then some yoghurt and I closed them burrito-style.
I put them in the aluminium paper, I wrapped them up and I cooked them for a pair of minutes more.
I mixed the tablespoon of yoghurt with the dijon mustard and I spreaded on the burrito when I served it.
I usually serve it with a vegetable side dish, for example zucchini and aubergines dressed with mint.
